Amankah ibu Hamil Makan Sushi?

Ibu hamil dalam hal asupan nutrisi perlu kehati-hatian (critical component nutrious)karena akan berpengaruh pada kesehatan ibu dan janin. Ibu hamil dan janin juga termasuk kelompok yang mempunyai resiko tinggi terhadap organisme patogen misalnya Listeria monocytogenes. Organisme patogen ini juga dapat ditemukan dalam ikan mentah dan beberapa cheeses (keju) terutama keju lunak.

Sebenarnya dalam suatu buku dijelaskan bahwa sampel /contoh Listeria monocytogenes ditemukan dalam keju cheddar, meskipun keju tersebut sudah selama 2 bulan .Kenyataan ini menunjukkan bahwa organisme tertentu dapat bertahan dalam proses pasteurisasi.

Akan tetapi hal tersebut di atas ,jangan menjadikan suatu kekhawatiran. Sebaiknya ibu hamil berhati-hati dengan asupan nutrisinya. Masak semua daging dan cuci buah dan sayuran. Hal itu akan menurunkan resiko kontaminasi organisme.

Tinjauan teerhadap Sushi

Sushi menjadi polemik saat masa kehamilan karena beberapa mekan sushi memang beresiko terhadap golongan bakteri/parasit tertentu dan juga kandungan merkuri. Perlu diketahui, TIDAK SEMUA sushi adalah berasal dari ikan/daging mentah (baca di sini )

Menurut Chart obtained from the Natural Resource Defense Council (NRDC); data obtained by the FDA and the EPA. ada beberapa jenis yang sebaiknya diwaspadai untuk hidangan sushi oleh ibu hamil:

1. Highest mercury

AVOID

Kajiki (swordfish)

Saba (mackerel)

Shark

Tilefish

2. High Mercury

Eat no more than three 6-oz servings a month

Ahi (yellowfin tuna)
Buri (adult yellowtail)
Hamachi (young yellowtail)
Inada (very young yellowtail)

Maguro (bigeye, bluefin or yellowfin tuna)

3. LOWER MERCURY

Eat no more than six 6-oz servings per month

Suzuki (sea bass)*

LOWEST MERCURY

Enjoy two 6-oz servings a week

Lalu bagaimana dengan wanita hamil yang makan sushi made in Japan?

wanita hamil di Jepang tetap mengkonsumsi sushi. Namun tentu saja dengan memastikan dulu semua yang berhubungan dengan sushi ini sampai mereka yakin akan keamanannya. Jepang sendiri mempunyai “cara masak” sushi yang berbeda dengan negara lain, disamping “kualitas” ikan/daging yang digunakan.

Bebrapa ib hamil yang berhati-hati, memilih sushi yang tidak memakai ikan/daging mentah misalnya:

1) Unagi Sushi/Nigiri – cooked eel
2) Anago – sea eel
3) Kappa Maki – Cucumber sushi roll
4) Kanpyo Maki – some pickled vegetable roll.
5) Shitake Sushi – Japanese mushroom on top of sushi
6) Tempura Prawn Maki – Cooked.
7) Seafood Stick Maki or add Avocado and Mayonnaise and Cucumber to make California roll. Make sure they don’t put raw flying fish roe into it though.
8) Spider Roll Maki – soft shell crab deep fried. Not traditionally Japanese but cooked by most Japanese chefs outside Japan. I think its becoming popular back in Japan though with the Rainbow Rolls going on.
9) Futomaki – variety of vegetables pickled and non-pickled, eggs, mushroom, etc. This is a great roll.
10) Egg Tamago sushi

non traditional Japanese sushis:

2) Teriyaki Chicken or Fried Chicken maki
3) Cooked Tuna (mostly canned) with Mayonnaise Maki. I think they sell this in Japan as well usually as those triangular onigiri rice balls rather than maki?
4) Tofu maki.

Macam-macam sushi yang terkenal yaitu:

Nigiri
Small rice balls with fish, shellfish, etc. on top. There are countless varieties of nigirizushi, some of the most common ones being tuna, shrimp, eel, squid, octopus and fried egg.
Gunkan
Small cups made of sushi rice and dried seaweed filled with seafood, etc. There are countless varieties of gunkanzushi, some of the most common ones being sea urchin and various kinds of fish eggs.
Norimaki
Sushi rice and seafood, etc. rolled in dried seaweed sheets. There are countless varieties of sushi rolls differing in ingredients and thickness. Sushi rolls prepared “inside out” are very popular outside of Japan, but rarely found in Japan.
Temaki
Temakizushi (literally: hand rolls) are cones made of nori seaweed and filled with sushi rice, seafood and vegetables.
Oshizushi
Oshizushi is pressed sushi, in which the fish is pressed onto the sushi rice in a wooden box. The picture shows trout oshizushi in form of a popular ekiben (train station lunch box).
Inari
Inarizushi is a simple and inexpensive type of sushi, in which sushi rice is filled into aburaage (deep fried tofu) bags.
Chirashi
Chirashizushi is a dish in which seafood, mushroom and vegetables are spread over sushi rice. It can resemble domburi with the difference being that chirashizushi uses sushi rice while domburi uses regular, unseasoned rice.

Note that “sushi” becomes “zushi” in word combinations in which “sushi” is the second word, e.g. nigirizushi.
